a stomach apart
“betsu” comes from betsubara — 別腹 in Japanese. Literally, “the separate stomach”: the extra room you always keep for dessert, guilty pleasures and treats.
The expression felt too right not to become a place. A coffee shop you come to for the drink, and stay for everything else.
where it started
After years on the floor and behind the machine, the wish was simple: a calm place that does a few things well. A shot pulled properly, matcha whisked by hand, a pastry that did not come out of a box.
We mixed two habits: the precision of specialty coffee and the generosity of Asian street food. Hence “asian fusion”: not a concept, just a blend that looks like us.

No loud music, no clock running. A drink takes the time it takes, and the chair is yours.

One origin at a time, matcha we whisk, pastries from today. Few things, none of them approximate.

We like it when strangers end up talking. The long tables are there for that — and so are the card nights.

We sign an old jewellery workshop on rue du Trône. The walls stay raw.
