A coffee shop that does not rush you. Espresso, ceremonial matcha and small plates, just off the Sablon.
“betsu” comes from betsubara — 別腹 in Japanese. Literally, “the separate stomach”: the extra room you always keep for dessert, guilty pleasures and treats.
The expression felt too right not to become a place. A coffee shop you come to for the drink, and stay for everything else.

The sweet-savoury one people come back for. Miso rounds off the caramel, salt wakes the coffee up.
